That is exactly why hummus is a permanent staple in my pack.

Made from a brilliant, nutrient-dense base of chickpeas, tahini, and cold-pressed olive oil, it is a plant-based powerhouse packed with complex carbohydrates, healthy fats, and clean protein.

The trouble with store-bought tubs is that they are frequently overloaded with excess sodium, cheap seed oils, and artificial preservatives to extend their shelf life.

🎨 The 3 Flavour Customizations

Once your smooth base is spinning happily in the processor, it is time to split the batch or customize it into one of these three high-performance trail variations.

1. The Classic Garlicky

If you want to keep it simple, you are already there! Just taste the base mixture and adjust the seasoning.

For a deeper, mellow flavour that doesn’t leave you with fierce garlic breath on the fells, swap the raw garlic for 3-4 cloves of slow-roasted garlic squeezed straight from their skins.

2. Roasted Red Pepper & Smoked Paprika

This is my absolute favorite for long multi-day treks.

The sweet, charred notes of the pepper paired with a hit of smoke give you a savoury satisfaction that pairs perfectly with flatbreads.

How to make it: Add 1 large roasted red pepper (either jarred in water or charred fresh over a flame and skinned) alongside 1 teaspoon of sweet smoked Spanish paprika straight into your base recipe. Blend for another minute until smooth and fiery orange.

3. Zesty Beetroot & Fresh Mint

Aside from looking absolutely stunning on a trail side platter, beetroot is a secret weapon for hikers.

It is naturally loaded with dietary nitrates, which your body efficiently converts into nitric oxide to improve cardiovascular efficiency and endurance on steep mountain scrambles.

How to make it: Add 2 small, fully cooked vacuum-packed beetroots (un-pickled) and 3-4 fresh mint leaves into the base mix. Whisk until it turns an unmissable, deep magenta colour.

🎒 The Hiker’s Dispatch: Packing & Logistics

Because homemade hummus contains zero chemical preservatives or stabilizers, you need to handle it with a bit of trail sense to ensure it stays fresh and delicious from the trailhead to the summit.

Keep it Cool: Pack your hummus into a lightweight, airtight container (or a reusable silicone pouch to save space). Stash it right in the center of your backpack, wrapped closely next to your cold hydration bladder or flask to shield it from direct sunlight.

The Spoilage Rule: On a standard cool day out in the UK fells, homemade hummus will easily keep fresh for a full day of hiking. If you are trekking in peak midsummer heat, plan to consume it during your main lunchtime halt rather than saving it for a late evening camp meal.

What to Pack for Dipping: Skip the flimsy crisps that turn to dust inside your pack. Instead, pair your dips with sturdy oatcakes, rye crackers, sliced carrots, or thick wholegrain pita pockets that can withstand being jostled around in a rucksack.

Ingredients

  • The Master Base
  • 1 tin (400g) Chickpeas (drained, reserve canning liquid/aquafaba)

  • 3 tbsp Quality Tahini (runny sesame paste)

  • 2 tbsp Extra Virgin Olive Oil

  • 1 large Lemon (juice only)

  • 1 -2 cloves Garlic (peeled and crushed)

  • 1/2 tsp Ground Cumin

  • 1 pinch Sea Salt

  • 2-3 Ice Cubes (or 2 tbsp ice-cold aquafaba)

  • Variation 1: Roasted Red Pepper
  • 1 large Roasted Red Pepper (jarred or charred fresh)

  • 1 tsp Sweet Smoked Spanish Paprika

  • Variation 2: Zesty Beetroot
  • 2 small Cooked Beetroots (un-pickled)

  • 3-4 fresh Mint Leaves

Directions

  • Emulsify the Tahini: Add the tahini and freshly squeezed lemon juice to your food processor first. Whisk for a full 60 seconds until thick, pale, and incredibly creamy.
  • Integrate Flavours: Drop in the crushed garlic, ground cumin, olive oil, and a pinch of salt. Process again until completely smooth.
  • Process Chickpeas: Add the drained chickpeas in two separate batches, processing for at least two minutes after each batch until thick and uniform.
  • The Ice Cube Trick: While the motor is running, drop in the ice cubes (or cold aquafaba). The cold temperature shocks the fats, transforming the paste into a light, airy, velvet-smooth spread.
  • Customize Your Flavour: If making a variation, add your roasted pepper/paprika OR beetroot/mint now and blend for one final minute until color is vibrant and uniform.
