🧭 The Master Tray Bake Sequence

The secret to an elite trail tray bake is achieving a firm, chewy consistency rather than a light, airy sponge cake texture.

To do this, we use a melted-butter method and fold the ingredients together gently, keeping the rise low and the energy density exceptionally high.

Step 1: Prep and Toast the Nuts (Time: 10 mins)

Preheat your oven to 180°C (160°C fan / Gas Mark 4). Line a standard 20cm square baking tin with non-stick baking parchment, leaving a little overhang at the sides to help you lift the bake out later.

Roughly chop 150g of whole pecans, reserving a handful of whole halves to decorate the top if you like.

Step 2: Melt the Liquid Base (Time: 5 mins)

In a medium saucepan over a low flame, melt together 150g of unsalted butter, 150g of light soft brown sugar, and 2 tablespoons of golden syrup or black treacle.

Stir gently until the sugar dissolves completely into a smooth, glossy liquid, then remove the pan from the heat and let it cool for a couple of minutes.

Step 3: Combine the Spiced Flour (Time: 5 mins)

In a wide mixing bowl, sift together 200g of plain flour, 1.5 teaspoons of ground ginger, 1 teaspoon of ground cinnamon, half a teaspoon of ground nutmeg, and a good pinch of sea salt.

Stir the dry ingredients with a fork to ensure the warming spices are distributed evenly throughout the flour.

Step 4: Fold and Load the Tin (Time: 5 mins)

Pour the melted butter and sugar liquid directly into the bowl of dry spiced flour. Beat in 2 large eggs until completely smooth.

Finally, fold through your chopped pecans.

The resulting batter should be thick, glossy, and heavy with nuts. Pour it into your prepared tin, smoothing it into the corners with a spatula, and press the reserved pecan halves evenly into the surface.

Step 5: The Firm Chew Bake (Time: 25 mins)

Bake in the centre of the oven for 22 to 25 minutes. You want the edges to be firm and golden brown, while the centre should still have a very slight, fudgy give.

Remove from the oven and let it cool completely in the tin. Once cold, use the parchment overhang to lift the block out onto a board and slice it cleanly into 12 rugged trail squares.

Ingredients

  • 150 g Whole Pecans (roughly chopped, keeping a few whole for the top)

  • 150 g Unsalted Butter

  • 150 g Light Soft Brown Sugar

  • 2 tbsp Golden Syrup or Black Treacle

  • 200 g Plain Flour

  • 1.5 tsp Ground Ginger

  • 1 tsp Ground Cinnamon

  • 0.5 tsp Ground Nutmeg

  • 2 Large Eggs

  • 1 pinch Sea Salt

Directions

  • Preparation: Preheat your oven to 180°C (160°C fan). Line a 20cm square baking tin with greaseproof baking paper, leaving an overhang on the sides.
  • Melt Base: Melt the unsalted butter, brown sugar, and golden syrup together in a saucepan over a low heat until smooth. Remove and let cool slightly.
  • Dry Mix: Sift the plain flour, ground ginger, cinnamon, nutmeg, and sea salt into a large bowl and stir.
  • Combine: Pour the melted sugar mixture and the eggs into the dry flour. Mix thoroughly until smooth, then fold in the chopped pecans. Spoon the thick batter into the lined tin and press the remaining whole pecans into the top.
  • Bake & Cut: Bake for 22-25 minutes until the edges are golden and set. Cool completely within the tin before lifting out and cutting into 12 travel-sturdy squares.
