This is my keto adaptation on a classic Italian dish. Keto chicken alfredo with cauliflower eliminates all those nasty carbs you get with pasta and uses some healthy cauliflower as well as that gorgeous and cheesy keto friendly alfredo sauce.

This is one of those dishes I make a big batch of and then I reheat portions throughout the following week. It is definitely tasty and satiating.

It is also a great meal to make for the whole family. If you are the only one doing a keto diet then you can always add noodles or pasta to their dish easily.

If you want to try variation on this yet keeping it keto then instead of cauliflower you could use spiralised courgette for instance.

Ingredients

  • 450 g 450 diced chicken breast

  • 100 g 100 diced bacon

  • 1 1 cauliflower head

  • 150 g 150 baby spinach

  • 2 tbsp 2 butter

  • 2 tsp 2 garlic powder

  • 180 ml 180 double cream

  • 50 g 50 grated parmesan cheese

Directions

  • Cut the cauliflower into small florets. Boil in a pan until soft as you prepare the rest. remember to drain well when done.
  • Fry the bacon bits in a frying pan until crispy. Then set the bacon aside.
  • Using the same pan with the bacon fat, add the butter, chicken bits and garlic and fry until the chicken is cooked through. Then set this chicken aside too.
  • Now fry the baby spinach until it is just about reduced. Set this aside as well.
  • In the frying pan add the double cream and parmesan cheese. Stir together and Let it boil through.
  • Add all the ingredients set aside plus the cauliflower and stir into the cheesy alfredo sauce.
  • Serve and enjoy.
