The secret to a perfect trail slice is avoiding a “soggy bottom.”

To do this, you must ensure your fillings are completely cold before they touch the pastry sheets.

For Cheese: Mix 200g of grated extra mature cheddar, 50g of Red Leicester, 1 finely diced onion (gently softened first), and 2 tablespoons of thick mashed potato or white sauce to bind it together.

Step 2: Roll and Cut the Pastry Sheets:

Time: 10 mins.

Preheat your oven to 200°C (Gas Mark 6) and line a large baking sheet with greaseproof paper. Unroll two sheets of ready-rolled puff pastry.

Cut each sheet into four equal rectangles, giving you eight pieces of pastry in total (four bases and four lids).

Step 3: Assemble and Load:

Time: 10 mins.

Lay four pastry rectangles onto your lined baking sheet. Spoon a generous amount of your completely cooled filling onto the centre of each base, leaving a clear 1.5cm border all the way around the edges.

Brush the exposed borders lightly with a little beaten egg.

Step 4: Crimp and Vent for Security:

Ingredients

  • The Pastry Shell
  • 2 sheets Ready-Rolled Puff Pastry

  • 1 Large Egg (beaten, for the egg wash)

  • Option A: Deep-Filled Steak & Onion
  • 400 g Lean Beef Mince or Finely Diced Beef Braising Steak

  • 1 Large White Onion (finely chopped)

  • 1 tbsp Plain Flour

  • 250 ml Rich Beef Stock

  • 1 tbsp Worcestershire Sauce

  • 1 pinch Sea Salt and Black Pepper

  • Option B: Classic Cheese & Onion
  • 200 g Extra Mature Cheddar Cheese (grated)

  • 50 g Red Leicester Cheese (grated, for colour and depth)

  • 1 Large White Onion (finely diced and softened in a knob of butter)

  • 2 tbsp Cold Mashed Potato (the secret baker’s binder)

  • 1 pinch White Pepper

Directions

  • Filling Prep: Prepare your filling of choice (Steak or Cheese) according to the guide above. Ensure the mixture is completely cold before assembling.
  • Cut Pastry: Preheat your oven to 200°C. Lay out your ready-rolled puff pastry sheets and cut each into four equal rectangles.
  • Fill: Place four rectangles onto a baking sheet lined with baking paper. Divide your cooled filling equally among the bases, leaving a clean border around the edges. Brush the borders with beaten egg.
  • Seal: Top with the remaining four pastry rectangles. Press the edges down firmly with a fork to crimp and seal them securely. Score the tops with a sharp knife to let steam escape, and brush the lids with egg wash.
  • Bake: Bake for 20-25 minutes until the pastry is puffed, crisp, and deep golden brown. Transfer to a wire rack to cool completely before packing into your kit bag.
