Being on a keto diet I could go and make a keto friendly pie crust but why bother? This crustless pie has enough wholesome goodness in it to satiate without it. Plus, there are only 3g of carbs per serving.

Tips on preparing the spinach:
Wilted spinach is called for in this recipe. If using frozen wilted spinach, make sure you thaw it completely and get it as dry as possible to avoid a soggy pie.
If using fresh spinach like I did, then wilt it down in a pan, but also be sure to let it dry as much as possible.
Oh, and before we get into a debate, I call it a crustless pie. Some may call it a crustless quiche, or even a frittata. Whatever you call it, enjoy!
I chose to use cheddar cheese in my pie, but you can use virtually any cheese of your choosing. Grated mozzarella or swiss cheese are great alternatives. You could even use a mix of cheeses including feta for a lovely Greek taste.
This recipe is also so very adaptable. You can use it as a base and then add your own ingredients to taste, including mushrooms or bacon.
