This cheesy celery bake is a great keto friendly dish on its own or for using as a side to accompany your cooked meat dish. Full of flavour, full of a cheese sauce and the baked celery within is light and full of goodness.
It is so simple to make with only 3 main ingredients that most stores stock. Minimal prep required too and soon you shall have that baking cheese aroma filling the air and whetting your appetite.
In a previous recipe I showed you broccoli and cauliflower cheese. This one uses celery as the veg but also reduces the ingredients a little to make a more simpler recipe to prepare.
Celery is a good go-to on the keto diet. It helps to get some fibre into your digestive system plus it is very low in calories. Celery can be the yin to the yang that is the cheese and cream.
The cream of celery soup was popular so it was about time I revisited this often overlooked vegetable.
I am like most people in that previously I had only eaten them crunchy and raw, maybe as a way of eatng dips. But I have a new found love of soft baked celery that does not make me feel guilty nor have any fear of coming out of ketosis.
Utensils required – Saucepan, baking dish.
You could even use this recipe as a base and then enhance it by adding bacon bits, lardons etc to make an even more flavoursome meal in its own right. Enjoy!
