After a few hours of sweating on an ascent, you don’t always want heavy fudge. You want freshness. You want something that wakes up your palate.

Enter the Zesty Lemon “Snowball”.

These little spheres of sunshine are the answer to trail fatigue. They use just four ingredients, require absolutely no baking, and look incredible on the pathways.

Plus, the sharp hit of citric acid from the lemon stimulates saliva production, helping to cure that dry “cottonmouth” feeling you get at high altitudes or big hikes.

Ingredients

  • 200 g 1 Cup Raw Cashews (Unsalted is best).

  • 200 g 1 Cup Medjool Dates (Pitted). Tip: If your dates are dry, soak them in warm water for 10 mins then drain.

  • 1 Large Lemon (You need the Zest of the whole lemon and juice of half).

  • 100 g 1/2 Cup Desiccated Coconut (Unsweetened). Split this: half for the mix, half for rolling.

Directions

  • Step 1: The Cashew Crumble: Toss your cashews into the food processor. Pulse them until they look like coarse breadcrumbs. Why first? If you blend them with the dates immediately, you often get big chunks of nut. We want a smooth, cookie-dough texture.
  • Step 2: The Zesty Bind. Add your pitted dates, the zest of the entire lemon, and about 1 tablespoon of lemon juice.
  • Process: Blitz on high for 1-2 minutes. The mixture will go from “dusty” to a sticky ball that thumps against the side of the processor.
  • Test: Pinch a bit between your fingers. If it sticks together easily, itโ€™s done. If it crumbles, add another teaspoon of lemon juice.
  • Step 3: The Snow Roll. Take the coconut and spread it on a plate. Scoop a tablespoon of the dough, roll it into a ball, and then drop it onto the coconut plate. Roll it around until it is fully coated in white “snow”.
  • Step 4: Set Pop them in the fridge for 30 minutes to firm up. They can last up to a week in your pack (the lemon acidity helps preserve them), but they rarely last that long!

These snowballs have become a permanent fixture in my rucksack for summer hikes. There is just something about that zesty kick that powers you through the final mile.
