Ingredients

  • 453 g Fresh or frozen cherries

  • 300 g Granulated sugar

  • 1 liter Brandy

  • 2 cloves Whole

  • 1 stick Cinnamon, broken into pieces

  • 6.35 mm Fresh, whole nutmeg

  • 1 liter Sealable jar with lid

Directions

  • Defrost the frozen cherries in a large bowl. Once defrosted, mash the cherries with a potato masher or wooden spoon to extract as much juice as possible.
  • Combine the brandy and sugar in the sealable jar and stir until the sugar is dissolved. Add the cherries, along with their juice and the spices. With the top on the jar, shake until well combined.
  • Store your jar of Cherry Bounce somewhere cool for at least 2-3 weeks, shaking gently or stirring every couple of days.
  • When you’re ready to enjoy your Cherry Bounce, remove the cherries and store them in the fridge or freezer; use for garnish if you like. These are also delicious on top of ice cream but will be heavily infused with bourbon, so should be enjoyed by adults only.
  • Strain the remaining solids out of your Cherry Bounce cordial, ensuring you transfer all of the cordial into a mixing bowl or other vessel from which you can easily pour. Then transfer the cordial into a nice bottle or decanter.
  • Serve at room temperature in a cordial or small wine glass. Place any remaining Cherry Bounce in the fridge until ready to drink again.
