When the granola comes out of the oven, it will seem soft and wet. Do not touch it!

As the melted maple syrup and coconut oil cool down, they solidify into a rock-hard, glassy sheet that you can break apart into durable, trail-ready chunks.

Step 1: Combine the Dry Matrix (Time: 5 mins)

Preheat your oven to 160°C (140°C fan / Gas Mark 3). Line a large, flat baking tray with non-stick baking parchment paper.

In a wide mixing bowl, combine 200g of raw buckwheat groats, 150g of jumbo rolled oats (use certified gluten-free oats if required), 75g of pumpkin seeds, and 75g of flaked almonds.

Stir thoroughly with a wooden spoon to ensure an even distribution.

Step 2: Prepare the Amber Binder (Time: 3 mins)

In a small saucepan over a low flame, melt together 4 tablespoons of virgin coconut oil, 5 tablespoons of pure maple syrup or honey, 1 teaspoon of ground cinnamon, and half a teaspoon of sea salt.

The salt is absolutely vital here—it doesn’t make the granola savoury, but it activates the natural nuttiness of the toasted buckwheat and helps restock baseline minerals.

Step 3: Coat the Groats (Time: 2 mins)

The Trail Master’s Cluster Secret: The granola will feel soft when hot, but do not stir it! Let the tray sit completely undisturbed on the counter for a full 45 minutes. Once the coconut oil and maple syrup drop to room temperature, they will lock the grains into a solid, crunchy armour. Break the sheet apart into chunky clusters and store them in a airtight jar or zip-lock trail bag.

Ingredients

  • 200 g Raw Buckwheat Groats

  • 150 g Jumbo Rolled Oats

  • 75 g Pumpkin Seeds

  • 75 g Flaked Almonds

  • 4 tbsp Virgin Coconut Oil

  • 5 tbsp Pure Maple Syrup or Honey

  • 1 tsp Ground Cinnamon

  • 0.5 tsp Sea Salt

Directions

  • Preparation: Preheat your oven to 160°C (140°C fan). Line a large baking sheet with greaseproof baking parchment.
  • Mix Dry: Combine the raw buckwheat groats, jumbo rolled oats, pumpkin seeds, and flaked almonds in a large bowl.
  • Melt Binder: Warm the coconut oil, maple syrup, ground cinnamon, and sea salt together in a small saucepan over low heat until fully melted and smooth.
  • Pack Flat: Pour the liquid over the dry ingredients and stir until fully coated. Transfer to the baking sheet and press down firmly with a spoon into a tight, flat layer.
  • Bake & Cluster: Bake for 25-30 minutes until golden brown. Remove from the oven and let it cool completely untouched for 45 minutes until hardened. Break into chunky clusters and pack into trail containers.
