Chicken breast stuffed with mozzarella and wrapped into a parcel with bacon. This makes a juicy, cheesy and flavoursome main to go with your side of choice.
My own favourite side dish for this chicken delight is to go even more cheesy with Keto Broccoli and Cauliflower Cheese. But to be honest it is such an adaptable meal idea that you can go for any sides that go with chicken, for instance the Keto Creamy Risotto.
For quick and easy I use grated mozzarella to stuff my chicken breasts but you can go wild with your imagination if you want alternatives or to add to it. Spinach and cheese is nice or use some different cheese like cream cheese, goats cheese or feta.
Another multi ingredient stuffing alternative is parmesan, cream cheese, mayo and garlic.
This base recipe using just grated mozzarella for stuffing has only 0.5 g of carbs per serving so perfect for keto or low carb diets.
Butterflying the chicken
A lot of store bought chicken breasts are not split and ready for stuffing so you may need to butterfly them. This is getting them so you can open them like a book.
Cut through the long edge of the chicken breast horizontally half way up. Keep going through the chicken, almost to the other side but not quite all the way.
Then open the breast up so that it is now resembles an open book or a butterfly.
Then cover the chicken in clingfilm and use a rolling pin the flatten it. You can then roll your stuffing choice inside the breast.
