2 Large Eggs

275ml Milk

pancake mix ingredients in bowl with whisk

Whisk this together until you have a smooth cream and then slowly add in the rest of the milk a bit at a time until all the milk has gone

Add in your olive oil and whisk again

Place the mixture in a jug and cover with cling film then place in the fridge for at least 30 minutes

Heat up your non stick frying pan and add in the oil so that it becomes very hot- then pour out the oil into a heat proof cup or bowl by the side of your frying pan

Pour a little of the batter into the frying pan and tip it so that the batter covers the base and cook until you can slide it along the pan without it sticking and then have a go at flipping the pancake so that you can cook the other side

When fully cooked slide onto a plate
