A vanilla and apple cake with a baked, crunchy, oaty topping smothered in toffee sauce. This is a tantalisingly sweet and moist treat with a deliciously crunchy top.

It’s perfect for any occasion and so easy and quick to make. Just the smell alone when it was cooking, made me want to dive in.

It’s delicious served warm on it’s own or with Custard or a dollop of ice cream. Maybe make for a birthday cake with a difference or as a sneaky snack when you really want to spoil your tastebuds.

Due to how easy it is to make I can guarantee you will be making more after your first attempt.

Ingredients

  • 8 oz Self Raising Flour

  • 8 oz Butter

  • 8 oz Caster Sugar

  • 4 Eggs

  • 1 Teaspoon Vanilla Essence

  • 1 Eating Apple

  • 1 tbsp Porridge Oats

  • 1/2 tbsp Demerara Sugar

  • For The Topping
  • 1 Jar Toffee Sauce ( I found a lovely toffee apple sauce which was delicious)

Directions

  • Place your sugar and butter in a bowl and mix together until fluffy. Add the egg and vanilla essence and mix together until blended.
  • Sieve the flour and fold in.
  • Core the apple and slice into small slices
  • Grease and line your loaf tin
  • Line the bottom of the tin with a bit of your cake mixture then arrange the apple slices along the bottom
  • Pour in the rest of your mixture
  • Mix together the Porridge Oats and Demerara Sugar then sprinkle over the top of the cake
  • Place in a pre-heated oven at 180 degrees or 160 degrees for a fan oven and cook for around 45 minutes- 1 hour ( use a cake skewer to check if the cake is done- it should come out clean when the cake is fully cooked)
  • Remove from the oven and leave to cool a little
  • Gently remove the cake from the tin and place on a serving plate
  • Smother the top of the cake with the toffee sauce
