Ingredients

  • 1 Large Head of Cauliflower (cut into uniform florets)

  • 150 g Smoked Bacon Lardons (or thick streaky bacon)

  • 3 cloves Fresh Garlic (peeled and left whole)

  • 60 g Full-Fat Cream Cheese

  • 30 g Unsalted Butter

  • 80 g Mature British Cheddar (finely grated)

  • 1 small bunch Fresh Chives (chopped)

  • 1 pinch Coarse Sea Salt and Cracked Black Pepper

Directions

  • Crisp Bacon: Fry the smoked bacon lardons in a hot skillet for 5 minutes until completely crunchy and golden. Remove with a slotted spoon and reserve the bacon fat in the pan.
