Ingredients

  • The Spiced Fruit Base
  • 3 Large Bramley Apples (peeled, cored, and chunked)

  • 2 Large Ripe Pears (peeled, cored, and chunked)

  • 150 g Fresh or Frozen Blueberries

  • 50 g Light Soft Brown Sugar

  • 1 tsp Ground Cinnamon

  • 2 tbsp Water

  • The Crunchy Oat Topping
  • 150 g Plain Flour

  • 100 g Unsalted Butter (chilled and cubed)

  • 75 g Rolled Jumbo Oats

  • 75 g Demerara Sugar

  • 1 pinch Sea Salt

Directions

  • Oven Setup: Preheat your oven to 190°C (170°C fan / Gas Mark 5).
  • Soften Fruit: Place the chunked apples, pears, brown sugar, cinnamon, and water into a saucepan. Simmer gently over a medium heat for 5 minutes until just softening.
  • Fold Berries: Remove the pan from the heat and gently fold in the blueberries. Transfer the whole mixture into a medium baking dish.
  • Rub Topping: In a bowl, rub the plain flour and cold cubed butter together using your fingertips until clumpy crumbs form. Stir in the jumbo oats, demerara sugar, and a pinch of salt.
  • Bake: Scatter the oat topping loosely over the fruit base. Bake in the centre of the oven for 30 minutes until the fruit is bubbling and the topping is golden brown and crunchy. Serve hot with custard.
