  • 1 tbsp Vegetable Oil or Ghee

  • 1 Large White Onion (finely chopped)

  • 2 cloves Garlic (crushed)

  • 1 thumb Fresh Ginger (finely grated)

  • 1 tbsp Medium Curry Powder

  • 1 tsp Garam Masala

  • 0.5 tsp Ground Turmeric

  • 150 g Dried Green Lentils (rinsed)

  • 400 ml Vegetable Stock (from 1 cube)

  • 1 tin Full-Fat Coconut Milk (400ml)

  • 100 g Fresh Baby Spinach

  • 0.5 Fresh Lime (for juicing)

  • 1 pinch Sea Salt and Black Pepper

Directions

  • Sauté: Heat the oil or ghee in a deep camping pot over a medium flame. Sauté the chopped onion, garlic, and grated ginger for 4-5 minutes until soft and translucent.
  • Toast Spices: Add the curry powder, garam masala, and turmeric. Stir constantly for 90 seconds to toast the spices directly against the pan base.
  • Simmer Lentils: Stir in the rinsed dried green lentils followed by the vegetable stock. Bring to a boil, then turn the burner down to low, cover with a lid, and simmer for 20-25 minutes until the lentils are tender.
  • Enrich: Pour in the tinned coconut milk and toss in the baby spinach. Stir well and let it simmer uncovered for 5 minutes until the curry thickens beautifully and the spinach wilts.
  • Season: Finish with a generous pinch of sea salt, a crack of black pepper, and the fresh lime juice. Serve hot straight from the pot with flatbread or pre-cooked rice.
