Spread 250g of porridge oats, 30g of sunflower seeds, and 200g of mixed chopped nuts (walnuts, almonds, or pecans work brilliantly) across a large flat baking sheet.

Roast in the oven for 8 to 10 minutes, stirring occasionally, until the grains give off a rich, toasted aroma and turn lightly golden.

Step 2: Whisk the Vegan Liquid Binder (Time: 5 mins)

Ingredients

  • 250 g Rolled Porridge Oats

  • 200 g Mixed Nuts (Almonds, Walnuts, Pecans, roughly chopped)

  • 30 g Sunflower Seeds or Pumpkin Seeds

  • 2 Ripe Bananas (mashed)

  • 80 g Coconut Oil

  • 80 ml Pure Maple Syrup

  • 2 tbsp Smooth Almond Butter (or Peanut Butter)

  • 1 tsp Ground Cinnamon

  • 1 tsp Vanilla Extract

  • 50 g Vegan Dark Chocolate (optional, for the drizzle)

Directions

  • Toast Grains: Preheat your oven to 180°C. Spread the porridge oats, chopped mixed nuts, and sunflower seeds on a baking sheet. Toast in the oven for 8-10 minutes until lightly golden. Line a 20cm square tin with baking parchment.
  • Melt Binder: In a small pan over low heat, gently warm the coconut oil, maple syrup, and almond butter together until completely melted and smooth.
  • Fruit Base: In a large bowl, mash the two ripe bananas completely with a fork. Stir in the vanilla extract and ground cinnamon.
  • Compress: Add the toasted oat mix and the melted liquid binder into the bowl with the mashed banana. Mix thoroughly until unified. Tip into the lined tin and press down with maximum force using the back of a spoon to compact it tightly.
  • Bake & Cut: Bake for 22-25 minutes until golden brown. Cool in the tin. Drizzle with melted dairy-free dark chocolate if desired, then chill in the fridge for 1 hour before lifting out and slicing into 16 firm, pocket-durable squares.
