The difference between a soggy, heavy pizza and a spectacular, light, and crispy crust comes down to two simple rules: extreme heat and minimal handling.

You do not need a fancy outdoor pizza oven to get a professional result.

By cranking your standard kitchen oven to its absolute maximum temperature and preheating a heavy baking tray or a pizza stone for at least 30 minutes beforehand, you create an intense blast of residual heat.

To keep things completely stress-free after a long trek, you can easily whip this dough up the night before and let it rest in the fridge.

If you’re making it fresh on the day, it takes just under an hour to rise—the perfect window to jump in a hot shower and grab a cold drink.

1.Step 1: Activate the Yeast: Time: 5 mins.

Stir 1 packet of fast-action dried yeast and 1 teaspoon of sugar into 300ml of lukewarm water. Let it sit for 5 minutes until it becomes frothy, proving the yeast is alive and kicking.

2.Step 2: Knead into a Smooth Ball: Time: 10 mins.

Combine 500g of strong white bread flour (or Italian Tipo 00 flour) with 1 teaspoon of sea salt in a large bowl. Pour in the yeast liquid and 2 tablespoons of olive oil. Knead vigorously on a clean surface for 10 minutes until the dough is smooth, springy, and no longer sticky.

3.Step 3: The Rest and Rise: Time: 45 mins.

Place the dough ball into a lightly oiled bowl, cover it with a damp tea towel, and leave it in a warm corner of the kitchen for 45 to 60 minutes until it has fully doubled in size.

4.Step 4: Stretch, Don’t Roll: Time: 5 mins.

Divide the dough into two equal balls. Punch the air out, and use your hands to gently press and stretch the dough from the center outward onto a sheet of baking paper.

Ingredients

  • The Recovery Crust
  • 500 g Strong White Bread Flour (or Tipo 00 flour)

  • 7 g Fast-Action Dried Yeast (1 sachet)

  • 300 ml Lukewarm Water

  • 2 tbsp Extra Virgin Olive Oil

  • 1 tsp Fine Sea Salt

  • 1 tsp Caster Sugar

  • The Mountain Toppings
  • 200 g Tomato Passata (seasoned with a pinch of salt and dried oregano)

  • 200 g Fresh Mozzarella or Shredded Mozzarella

  • 1 handful Fresh Basil Leaves

  • Optional High-Protein Additions: Torn prosciutto, sliced spicy salami, or roasted wild mushrooms.

Directions

  • Activate: Whisk the dried yeast and sugar into lukewarm water; leave for 5 minutes until frothy.
  • Mix & Knead: Combine flour and salt in a bowl. Pour in the yeast liquid and olive oil. Bring together into a dough and knead on a floured surface for 10 minutes until elastic.
  • Rise: Rest the dough in a covered, greased bowl for 45-60 minutes in a warm room until doubled in size.
  • Shape: Preheat your oven to its absolute maximum setting (240°C–250°C) with a heavy baking sheet inside. Divide dough into two, and stretch out into large circles using your fingers, leaving a slightly thicker rim around the edge.
  • Assemble & Bake: Top with the seasoned passata, cheese, and your chosen toppings. Carefully slide the pizza onto the hot baking sheet and bake for 8-10 minutes until crispy and bubbling. Top with fresh basil before slicing.

Notes

  • For the pizza sauce – you can buy this ready made or sometimes I will use a tomato pasta sauce and thicken it by adding a bit of sun dried tomato paste.
