Making your own tasty pizza dough is easier than you think. You can add your own flavours and toppings making each person’s pizza bespoke to their tastes. You can get the children involved too, to help inspirit them with a bit of cooking.
The recipe combines flavour into the pizza dough but it is up to you if you want to add your own herbs or you can of course also have it plain. Both work equally as well. You can also roll the dough as flat as you like or leave it with a bit of volume if you prefer a more doughy base.
For the base:
250g strong white bread flour
1 tsp salt
3ml/3¼ tsp easy blend rapid rise dried yeast
1 tbsp olive oil – you can use flavoured if you wish
150ml/¼ pint warm water
½ tsp black pepper
1 tsp basil (chopped fresh or dried)
1 tbsp sun dried tomato paste
1 tsp oregano
1 tbsp Semolina (to roll out onto)
For the Topping:
Basic tomato sauce for pizza – you can buy this ready made or sometimes I will use a tomato pasta sauce and thicken it by adding a bit of sun dried tomato paste.
Cheese – any you desire. I use a mix of Mozzarella and grated cheddar
Any toppings you like for example:
Chopped tomatoes, onion, chilli, pepperoni, ham, basil leaves, mushrooms, pepper
and a sprinkling of oregano when all the toppings are done.
To make the dough:
Sift the dry ingredients into a large mixing bowl, including any additional herbs you wish to add, eg basil.
Add the oil and water. Start mixing using a spoon until the dough is combined.
Now for the messy part. Get your hands in and start mixing and kneading your dough. This needs kneading for approximately 10 minutes.
When you are done, put the dough into a lightly oiled baking tin and cover with clingfilm. Leave in a warm place for about 2 hours or until doubled in size.
When risen, rip into 2 portions for 2 large pizzas or 4 portions for 4 smaller pizzas. Roll each one into a ball.
If you like a bit more texture, sprinkle some semolina onto your work surface and roll out each pizza base. Put them onto their baking trays ready to prep with their toppings.
Use the base of a spoon to spread your pizza topping sauce. Rip apart the mozzarella (if using) and use your cheeses and toppings, spreading evenly over the bases.
To finish, give a little sprinkle of oregano over the tops. Drizzle over a tiny amount of olive oil and put your completed pizzas in the oven (200c/400f/gas mark 6) for around 15-20 minutes until crisp and golden.
