This Chocolate Fudge Cake is a rich, decadent, melt in your mouth chocolate cake with a sticky fudge feel – it’s a chocolate lovers indulgent treat.
Add a dollop of cream or ice-cream to finish it off this dreamy delight.
You will need 2 x 8″ sandwich tins greased and lined.

250 g Chocolate
10 oz Butter
10 oz Soft Brown Sugar
6 oz Plain Flour
4 Eggs
1 Tsp Vanilla Essence
- Filling
1 Tbsp Cocoa Powder
250 g Butter
500 g Icing Sugar
- Topping
250 g Chocolate for the topping
Directions
- Break up the chocolate and place in a heat proof bowl and add the butter to the bowl
- Place this over a pan of boiling water so that the heat from the water melts the chocolate and butter together
- When totally melted take off the heat and mix this into the sugar
- Fold in the plain flour then whisk in the eggs and the vanilla essence
- Place half of the mixture in each tin and place in the oven on 180 Degrees fro about 30-40 minutes until cooked all the way through
- Take the cakes out of the oven and leave to cool
- To make the chocolate icing- place the cocoa powder, butter and icing sugar into a bowl and whisk together until blended in
- Melt the chocolate for the topping in a heat proof bowl over a pan of boiling water and melt until completely running- set this aside to cool a little
- Take the two cooled cakes and level them off and cut both in half – sandwich them back together using the chocolate buttercream between each layer then coat the outside of the cake with the remaining chocolate buttercream
- Poor over the slightly cooled chocolate
Serve with either cream or ice cream and enjoy.
