Roasted asparagus is a quick and easy way to get goodness and greens into your keto diet. And rather than have them plain or bland you can add lots of flavourful goodness to the dish to make it a tasty delight.

This meal can be prepared so simply and quickly too. Just 10 minutes prep and 10 minutes cooking and you have a tasty, healthy vegetable filled meal or side ready to eat.

This is yet another keto diet meal that you can vary or adapt to your own taste with ease. Remove the bacon for vegetarian or to make quicker.

You may want to grill some cooking cheese on top rather than sprinkle parmesan. You could also add a dash of lemon juice. The options go on but the main point is getting in a whole meal that includes lots of healthy roasted asparagus.

Ingredients

  • 500 g Asparagus

  • 2 tbsp Olive Oil

  • 1 tsp Garlic Powder

  • 1 Rasher of Bacon or Lardons

  • Salt and Pepper

  • 20 g Parmesan Cheese

Directions

  • Pre heat the oven to 220c/425f/Gas Mark 7
  • Cut the bacon to small pieces and fry on the hob to cook.
  • Chop the bottom ends from the asparagus to get rid of the hard woody parts.
  • Place the asparagus on a baking tray.
  • In a small bowl or cup mix or whisk well the olive oil, garlic, salt and pepper.
  • Drizzle the mixture over the asparagus evenly. You can also toss it through.
  • Bake the asparagus in the oven for 10 to 15 minutes.
  • Once out of the oven, cover the asparagus in the cheese and spread the bacon bits over the top.

This recipe creates a keto meal in itself or can easily make 2 sides if accompanying something else. Enjoy!
