This is a great idea for fussy children to get them to eat two of their five a day – it’s full of goodness and delicious too.
You will need:
1 large loaf tin- lined
4oz Brown sugar
1 Large Egg
4-5 Large Bananas
3-4 tbsp Vanilla Yoghurt
1 tsp Vanilla Essence
8oz Plain Flour
1 tsp Bicarbonate of Soda
1 tsp Ground Cinnamon
Blend the butter and sugar together and add the egg and beat in.
Mash the bananas and add them to the bowl with the yoghurt and vanilla essence – mix well together.
Stir in the flour, bicarbonate of soda, cinnamon and salt.
Then stir in the raisins.
Cook in the oven for an hour at 180 degrees.
Let cool in the tin for a while then turn out onto a cooling rack.
Best eaten while it is still warm but can be eaten coldn.b you can add chocolate powder to the recipe to make it extra delicious or nuts if you are not allergic.
