A light vanilla Madeira sponge cake- filled with vanilla buttercream and strawberries – the way to any partner’s heart – perfect for a Valentines Day treat

Equipment:

1 x 6″ heart cake tin or round cake tin

Ingredients:

6oz Self Raising Flour
2oz Plain Flour
6oz Caster Sugar
6oz Margarine
3 Eggs
1 tsp Vanilla Essence

For the Filling:

125g Butter
250g Icing Sugar
1/2 tsp Vanilla Essence
Small punnet of strawberries
Small punnet of Blueberries

Method:

Line your cake tin

Mix together your butter and caster sugar
Add a little egg and a little flour and stir in – keep adding until all blended in
Add your vanilla essence

Place mixture into your cake tin and place in the oven at 160 degrees for 45 mins-1 hour

leave to cool

Mix together your icing sugar, butter and vanilla essence

Cut the cake in half and pipe or layer on some butter cream onto the bottom layer
Slice your strawberries and place them evenly around the buttercream
Place the top half onto the cake
Again pipe on your buttercream onto the top of the cake and add your blueberries in the shape of a heart and some sliced strawberries ontop

N.b : you can substitute the buttercream for real cream but please remember that you will need to refrigerate the cake after doing so.
