You will need:
3 x 8″ sandwich cake pans greased and lined


16 oz Self Raising Flour
16 oz Caster Sugar
16 oz Marg
8 Eggs
2 tsp Vanilla Essence
1 punnet of Strawberries

Filling and Topping:

Jar of luxury Strawberry Jam
500g Butter
1 kg Icing Sugar
1 tsp Baby Pink Paste Colour (not liquid)
2 tsp Vanilla Essence
10 Luxury Chocolate Balls
100g Milk Chocolate


Cream butter and caster sugar together
Add the beaten eggs and blend in
Stir in the sifted Flour and then add Vanilla Essence
Cut up your strawberries ( image 8429)
and mash with a potato masher ( image 8430)
Put the strawberries in a sieve, over a bowl, and mash with a fork to get most of the juice out ( image 8431)
Fold the strawberries into your cake mixture and divide evenly between your three cake pans ( image 8432 and 8433)
Place the cakes in the oven at 180 Degrees for about 30-40 minutes until done

Take out and cool

While the cakes are cooling make your icing
Mix your butter,vanilla essence and icing sugar together until white and fluffy- take out 1/4 of the white icing and set aside
Mix in the baby pink colouring into the rest of the mixture

Melt your chocolate and set aside to cool a bit- I always melt the chocolate in a glass bowl over a pan of boiling water ( make sure it is still runny) – (Image 8436)

Cut the tops off the cakes and sandwich together with your baby pink icing and strawberry jam
Then cover the whole cake with your pink icing until you cannot see the cake inside
Scoop your cooled chocolate into another icing bag and drizzle over the sides of the cake to make chocolate droplets down the side and then ice a circle of chocolate in the middle of the top
Place your white icing in a piping bag

Pipe on the white icing around the top of the cake inside the circle of chocolate and into the middle
Pipe around the bottom of the cake to finish it off
Add your luxury chocolates around the top of the cake
